It's summertime and strawberries rule the orchards in the Hudson Valley. There are a few "pick your own" farms, a couple of miles from where I am enjoying the Summer in Ulster County.
This is the second week into strawberry season and they are that much sweeter in comparison to 2 weeks ago when I first picked them to make a rustic tart. A touch of salt and some kind of grassy green would complement these little sugar bombs perfectly.
I've always loved feta with summer fruit, especially watermelon, and I thought, "why not combine it with strawberries?" A good sheep's milk feta will be tangy with just enough salt to complement the sweet fruit. Some freshly-picked tender curly parsley—which I happen to love more than the fibrous flat leaf version—a delicate drizzle of extra virgin olive oil and freshly cracked black pepper, makes for a delicious afternoon snack, appetizer or salad.
